Our sloping grove continues to expand each year as we add to it, allowing us to boost the harvest we produce under the Casa Fontestate trademark. That said, it has always been our intent that the gardening should never become a chore, but something we enjoy and that gives us pleasure. We pick our olives manually in late October and early November, using ordinary and electric harvesting rakes to gently persuade the fruits to drop out of the trees and into the nets below. The olives are collected in crates that have openings in them to allow the air to circulate and are delivered to the local mill in every 24 hours. To ensure the best quality, we use a modern continuous cycle system. The oil is obtained in couple of hours, after which it is filtered and then bottled before making its way to your kitchen (and, indeed, to ours).
